Tsuta began as a modest 9-seater ramen shop in Tokyo in 2012, founded by Chef Yuki Onishi. Driven by a passion for crafting truly original flavours, Chef Onishi sought to redefine the classic ramen experience with natural, premium ingredients—no MSG or artificial additives. By 2015, Tsuta achieved a remarkable milestone: becoming the World's First Michelin-Starred Ramen Restaurant. Avoiding shortcuts and applying meticulous technique, Chef Onishi constantly worked on refining and enhancing his ramen's taste and texture. For him, ramen is never perfect—only better with each creation.
